This is why we decided to start a new section, called Cooking Day, with the help of Laura Tedeschi, the author behind the celebrated Timo e Basilico blog. Laura is a painter based in Switzerland. Her cooking combines distinctly Italian dishes with an international outlook. Her recipes are designed to fit the busy lifestyle of a modern and dynamic woman, who looks for a touch of style even in food. Her recipes are simple, healthy, straightforward and quintessentially stylish.

COCONUT AND SALMON SOUP WITH GINGER AND CHILLI
Ingredients for 2 people
150 g fresh salmon fillet
1/2 tbsp extra virgin olive oil
500 ml coconut milk
1 small shallot
1 chilli (optional)
1/2 tsp ground ginger
a few sesame seeds and some fresh chilli to garnish
Method Finely chop the shallot and add to a pan with the coconut milk. Simmer for 10-15 minutes, then add the ground ginger and the finely chopped chilli, if using.
In the meantime, remove any bones from the salmon. Chop the fish into chunks and fry in a non-stick pan with the olive oil for a few minutes.
Blend the coconut milk and shallot mixture in a mixer until it becomes frothy and smooth. Add the salmon (break it up further with a fork if necessary) and blend until smooth. Pour the soup into two bowls and garnish with the sesame seeds and the finely chopped chilli. This soup is delicious both warm and hot.
